Reserve Dolcefuoco

Description
This wine was born in our vineyard MONTAGNO (SHEET 8 map 182,183 )
in CIGOGNOLA 309 m a.s.l. in OLTREPO PAVESE.
The 2021 harvest is the first year of production of our DOLCEFUOCO.

The harvest is done manually in small cassettes
with field selection of clusters.
About 500/600 kg of grapes (CROATIN, BARBER, RARE GRAPES)
are harvested at very low yields, harvested at maximum maturity.
The refining is done in a small barrel of vitrified cement,
at a controlled temperature for about 2 years.
The result is an unfiltered firm red wine that
improves with ageing being intact of all its natural substances.
About 300 bottles of 75cl are bottled.

Serving Temperatur
It is recommended to uncork it a little before the service and
drink it in good company at about 18 °

Serving Suggestions
It goes well with aged cheeses, risottos and red meats.
